Microgreens Salad Mix

Here's an easy way to get started with microgreens!

A simple yet delicious salad mix made with a combination of microgreens such as pea shoots, sunflower shoots and radish microgreens along with other fresh ingredients like cherry tomatoes, cucumbers, and feta cheese. (Feel free to substitute ingredients to your liking!)

MICROGREENS SALAD MIX

Ingredients:

- 2 cups mixed microgreens (pea shoots, sunflower shoots, micro-radish)
- A few cherry tomatoes, halved
- ¼ cucumber, sliced
- ¼ avocado, diced
- ¼ cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon dijon mustard
- Salt and pepper to taste
 

Instructions:

  1. Wash the microgreens thoroughly under running water.
  2. In a large bowl, combine the mixed microgreens with cherry tomato halves, cucumber slices, diced avocado, crumbled feta cheese.
  3. In a small bowl or jar, combine the olive oil and Dijon mustard.
  4. Whisk together until well mixed.
  5. Pour the dressing over the microgreens salad just before serving to ensure that the greens stay fresh and crisp.
  6. Toss gently to mix all ingredients together.
  7. Season with salt and pepper according to taste preferences.
  8. Serve immediately or refrigerate until ready to serve. Enjoy your delicious microgreens salad!

    This should serve about 2-3 people as a main meal and around 4 to 6 people if served as a small appetizer.
