Microgreens and Avocado Sandwich

Ingredients:

  • 2 slices of whole-grain bread
  • 1 ripe avocado
  • Handful of mixed microgreens (such as broccoli, radish, or sunflower microgreens)
  • 1 small tomato, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Prepare the Avocado Spread:
    • In a bowl, mash the ripe avocado with a fork.
